Paleo Cauliflower Hummus 

Low carb, vegan, whole 30, paleo etc.. (Yeah this shit is good for you)

Keep in mind that this recipe works best with a food processor or a high powered blender

Damn she fine o whateva.

INGREDIENTS

  • 1 large head cauliflower

  • 3 tbsp olive oil  

  • 1/4 cup tahini

  • 2 tbsp water, or more for desired consistency

  • juice from 2 lemons

  • 2 garlic cloves

  • 1/2 tsp salt

  • 1/2 tsp ground cumin

  • garnish with olive oil, paprika, and parsley

     

INSTRUCTIONS

  1. Roast the cauliflower by heating the oven to 425 degrees Fahrenheit. Spread the cauliflower on a pan and drizzle olive oil and sprinkle salt on top and roast for 25 minutes. Set aside and allow it to cool slightly. 

  2. Add the cauliflower, tahini, lemon, garlic, salt, and cumin to the food processor. Start by processing it slowly until all the ingredients have been well incorporated and is at a fine consistency. Once you think it is blended enough, change the setting to high for about 2 minutes. Slowly alternate in adding in olive oil and water until the consistency is smooth.  (If you want lower fat, just reduce the amount of olive oil that you add, and increase water)

  3. Give it a quick taste!! If its not to your liking, go ahead and add whatever you think it lacks!! Once it is perfect, go ahead and transfer to a pretty bowl or plate. I love adding paprika for some color with some drizzled olive oil and topped with some parsley for some freshness.
